Fresh Tomato Mushroom Salad

A delicious salad that tastes like summer.

Total time: 30 minutes
Prep: 10 minutes
Rest: 20 minutes

Ingredients
1 package (10oz) cherry tomatoes, the bigger ones halved
1 package (5oz) baby bella mushrooms, sliced
1/4 cup reduced-fat crumbled feta cheese
1/4 cup chopped fresh basil

Dressing
1 tablespoon extra virgin olive oil
1 teaspoon balsamic vinegar
1 teaspoon fresh lemon juice
1/2 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon black pepper

Directions
1. Place tomatoes, mushrooms, cheese and basil in a bowl.
2. Mix the dressing in a small jar.
3. Add dressing to salad and mix.
4. Keep at room temperature 20 minutes, mix again, and serve.
